  5. Cook until the tomatoes break down and the spices are well incorporated, about 5-7 minutes.
  6. Add the 2 lbs of chicken pieces to the pan and stir well to coat with the spice mixture.
  7. Season with salt to taste and cook for about 8-10 minutes, stirring occasionally.
  8. Pour in 1 cup of water and bring to a simmer. Lower the heat and cover the pan.
  9. Cook for 20 minutes, or until the chicken is fully cooked and tender.
